Jennifer Colliau is the bartender behind The Interval, the Long Now Foundation’s cocktail bar in Fort Mason that just might be the best new bar in San Francisco this year. (See Jon Bonné’s August write-up of it.)
Over the course of an eight-minute talk at Wired by Design, Colliau explains just about everything you need to know about the bar, from its past as a blacksmith forge during its military days to the ever-changing digital paintings behind the bar that are run with an algorithm. She also speaks about glassware, cocktail history, and how the Interval was built as a “place for conversation.”
It’s a fascinating look at the impetus and meticulous method behind one of the city’s most unique bars. For example, here is Colliau’s explanation of how she came up with her menu, which is actually a series of menus: “I love my industry so very much. I don’t know why everyone’s cocktail menu looks the same. I really just felt like we could have more than that. A cocktail menu can be so much more comprehensive.”
